I recently decided to get pack my lunch for the week on Sundays. After seeing many pins about salad in a jar, I decided to try it myself.

I made five salads for a week’s worth of lunch. Top questions I got:

How does the dry stuff not get wet? I put the things that must remain dry in last. Dressings and meat (I used baked salmon which tasted GREAT) went at the bottom. Spinach, arugula and red cabbage at the top of the jar.

What ingredients did you use? At the bottom I used different things each day. I tried a lemon white balsamic vinegar, then serrano honey vinegar, coconut oil and raspberry balsamic dressing. I purchased the vinegars from a store in Newnan called Branch & Vine. They let you taste vinegars and olive oils. It’s a unique experience I haven’t had anywhere else. I also used these noodles made from veggies called Wacky Mac and cous cous. I added chick peas too. I switched everything up for each different day. My favorite combo:

Lemon vinegar w/ a tsp of coconut oil

baked spinach

chickpeas

Wacky Mac noodles

sliced apples

spinach

walnuts

Did making the salads in advance cause the food to get soggy at the end of the week? Surprisingly, the food never got soggy. I even ate one of them on Saturday because I forgot my lunch for work on Friday. It tasted good. The salmon had more of the dressing flavor but it wasn’t soggy at all.

Next time, I’ll add a little more salmon or more chickpeas. Of the five I made, some had more than enough some had less. This was one with less/not enough. I’ll definitely do salad in a jar for another week and try different combos. Have you ever tried salad in a jar?
